SPINACH AND CHEESE SAMOSAS

Ingredients:

  • 450 g spinach
  • 8 Laughing Cow cheese wedges
  • 1 sweet onion
  • 2 cloves garlic
  • 1 tsp nutmeg
  • 1 tsp pepper
  • Salt to taste
  • Filo pastry
  • 80 g butter (for brushing)

PreparaTIOn:

  1. Preheat the oven to 180ºC
  2. First, dice the onion
  3. Add 10g of butter to a frying pan, add and brown the onion
  4. Add the garlic and once combined, add the spinach. Let it reduce until all the liquid evaporates
  5. Add the nutmeg, salt and pepper and cook for 5 minutes over medium heat
  6. Take the mixture off the heat and let it cool down
  7. Once cold, unwrap the cheese wedges and mix with the spinach mixture until you get a paste-like consistency
  8. Cut the filo pastry in wide strips of about 5 cm
  9. Melt the rest of the butter and brush over the filo pastry
  10. Fill the pastry making triangular shaped bags and bake at 180ºC for 10 minutes
  11. After 10 minutes has passed, turn the samosas over and bake for another 10 minutes
  12. Serve warm and enjoy!
